Some days, you just need a good bowl of soup. And on one such day, this soup recipe was born. I needed something I could throw together really quickly with what I had on hand, and I was blown away by how delicious it turned out. So I just had to share this keto hamburger rice soup with you as soon as possible!
Keto Hamburger “Rice” Soup
Traditional hamburger rice soups are fairly simple, but this keto version is even faster because you don’t have to wait for any rice to cook. And, because there is almost no prep at all (just cutting some onion!) this soup can be done in thirty minutes.
You guys, this is as simple as it gets, but the flavors are so great. The basic prep is to brown your meat with onion in a heavy bottomed pot, then dump in a can of crushed tomatoes, beef broth, cauliflower rice (I use frozen, so there’s no prep there either), a smidge of Worcestershire sauce, and some seasoning. Let it simmer until the cauliflower is cooked through and all the flavors have melded.
Let’s recap: cut onion, brown meat, throw everything in a pot and basically walk away for 20 minutes.
It’s really so easy.
Another bonus: really inexpensive. Even if you use grass-fed beef here, the rest of the ingredients are economical. If you’re watching your budget on keto you’ll be in great shape with this recipe.
This soup is hearty enough for winter, but has a brightness that lends itself perfectly to cool springtime days.

Note: the tomatoes here do add carbs. Each bowl comes out to 8 grams of net carbs. If you need to cut down the carbs, try decreasing the tomatoes and adding more broth.
- In a large pot or dutch oven over high heat, brown the ground beef with the onion. Season with salt and pepper.
- Add garlic and stir through.
- Add broth, crushed tomatoes, Worcestershire sauce, Italian seasoning, and riced cauliflower.
- Bring to a boil, then reduce heat to low.
- Cover and simmer 20-30 minutes or until cauliflower is cooked through.
- Taste and add salt & pepper as needed.
- Garnish bowls of soup with fresh parsley, if desired, and serve with Low Carb Foccacia.
