These low carb energy bites are the perfect grab-and-go snack for when you can’t quite make it to your next meal. They’re super easy to make and the macros are on point!

Generally speaking, snacking is not something that’s necessary on a ketogenic diet. If you’re eating enough at meal times, you won’t be hungry in between. But if we’re talking reality, sometimes you get hungry at inconvenient times, or your ability to prepare a full meal is impaired and you need something to eat before you start getting HANGRY.

These are perfect because they come together really quickly and can be stored in your fridge for a good week. The macros are basically perfect, so they’ll fit right into the rest of your day without throwing off your balance of carbs.

Let’s get to the recipe!

Low Carb Energy Bites

The ingredients I chose for these energy bites are almonds, shredded coconut, hemp hearts, almond butter, and coconut oil, plus a pinch of cinnamon and salt, and some optional sweetener.

I chose hemp hearts here because they’re a great source of protein, especially if you’re looking for something plant-based. If you’ve never tried them before, they have a mild, nutty flavor, and are a great addition to salads.

First we grind up all the dry ingredients in a food processor until they’re a medium-fine meal texture. Then add the almond butter and combine.

After the almond butter has been mixed in, pour in the melted coconut oil. This works best if you do it while it’s running, but it’s harder to get a good photo that way. #foodbloggerproblems

Run the food processor until the coconut oil is fully mixed and the mixture forms a ball.

The mixture will be fairly soft at this point. So I use a cookie scoop to portion it out onto a parchment-lined cookie sheet. You’ll need to chill them before they’re able to be rolled into balls without making a huge mess of your hands.

I mean, unless you’re into that sort of thing.

Here’s the thing, though. You don’t have to do anything else. You can leave them just as they are and chill them this way. They won’t look like your typical energy bite, but that doesn’t really matter most of the time. So if you want to be lazy, do it, friend! You can even tell your kids they’re cookies.

If you decide to go the extra step and form them into balls, chill them for 5-10 minutes in the freezer or until they’re just firm enough to roll. Then you can roll them in some more shredded coconut to make them look purdy.

Chill again until firm, and then store in the fridge. These need to stay cool or they’ll get quite soft again.

Instructions

  1. Combine almonds, hemp hearts, coconut, cinnamon, sweetener, and salt in a food processor. Pulse until finely ground.
  2. Add almond butter and combine.
  3. Pour in melted coconut oil while food processor is running, and process until the mixture forms a ball.
  4. Scoop with a cookie scoop into 16 balls. Chill for 5-10 minutes or until they're easy to roll.
  5. Roll into balls and then roll in coconut.
  6. Chill for another 10 minutes or more, until firm. Store in the refrigerator.

Notes

You can skip rolling the balls in coconut and just chill after scooping with a cookie scoop.
