First Day of First Grade!

Well, it’s official. I have a first grader.

For some reason this is hitting me harder than when he went off to kindergarten. He’s just getting so big! He was so excited this morning he could barely contain himself. He’s so excited that he gets to sit at the same table as his friend Samantha from his kindergarten class. I have a feeling his teacher may decide to separate them sooner than later. 😉

On Baking Bread and Remembrance

The last few days have been incredibly difficult ones for me.

On days like today, when my heart is heavily burdened, when my thoughts are clouded and my spirit is grieved, I find myself drawn to performing simple tasks with my hands.

Today I turned off the television, turned away from social media, did my best to shut out all the distractions and baked bread.

Little Man’s Angry Birds Birthday Party

Friends, we do not mess around over here when it comes to birthday parties.

Ever since my mom came to visit with her iPad, getting my son hooked on Angry Birds, I’ve been planning this Angry Bird-themed party. So, like 4-5 months of planning.

I don’t know what it is about kids’ parties that make me go a little nutty and start taking things beyond a normal level, but it’s just fun. Well, until it’s the week of the party and I’m swamped with things to make and get ready, and I can’t tone it down because I’m just too invested.

That being said, I did better than last year in that I wasn’t frantically frosting cupcakes as the guests arrived. I was plating the last of the appetizers as people got here, but other than that I was able to join the party from the get-go.

However, in similar fashion to last year, I was testing out recipes like a crazy person for months in advance. This year it was even more important because we had some food allergies to deal with. So I had to find and/or develop recipes that were gluten-free, refined sugar-free, dairy-free, and egg-free. Woah. So I tested out a lot of recipes, a few of which were so bad they went straight into the trash. Anyway. More on that later. (more…)

PB ‘N B French Toast Redux

Ok, friends. This is not a new recipe. In fact, this is the first recipe I ever posted on this blog. And it’s a goodie.

But here’s the thing. The first time I made it for you, Little Man was less than 2 months old. Which meant that I didn’t have a ton of time for these things, and that most of my cooking happened after he went to bed (i.e. after it was dark.) So the pictures I posted were terrible. That didn’t stop many of you from leaving lovely comments on how delicious it sounded. But it’s bugged me for a long time.

So, recently I made this again and decided to take pictures of the process. This time I made it for breakfast, so natural light was plentiful. I left the directions mostly the same, but this time we made 4 sandwiches instead of 3, since Little Man loves himself some french toast.

To review, the PB N B in the title stands for Peanut Butter, Nutella & Banana.  In french toast. It’s pretty much all kinds of awesome. I mean, seriously. How can you go wrong with that combo?  This isn’t so much a recipe as an idea.  I don’t follow a recipe when I make french toast, so if you have a favorite recipe, you can easily use it when making this.
