Merry Christmas! How cute are these cardinal Christmas cookies?

I don’t know about you, but I’m way behind on everything and COMPLETELY NOT READY for Christmas just yet. 🙂 So I thought I’d just give you a quick shout out, and share our Christmas cookies this year. We went with a cardinal theme and kept it simple with 3 shapes. And I only have the one picture because I can’t seem to find my head these days! Haha. I hope it gives you some inspiration anyway!

In spite of it all, I want to wish all my readers the happiest of holiday seasons!

Technical details: We used two consistencies of icing, 20-second icing and piping icing. We didn’t bother outlining the cookies, just used the 20-second icing to create the single color backgrounds.

Coca {Spanish Flatbread}

29683249452_41df090c9d_nSo I know Thanksgiving is in a week (eek!) so a normal blogger would be sharing something  turkey-related, but I promised you guys some quick weeknight meal ideas, and I’m really excited to tell you about this one.

I hesitate to call this one “quick” when it involved caramelized onions. If you’ve ever caramelized onions, you know it’s not quick.

But even with that, this meal comes together surprisingly fast and most of all, it’s easy. Like, super easy. Oh, did I mention it’s totally delicious? It is.

Rhubarb Meringue Bars

I made these bars last year. I photographed them. I edited the photos. I even started a post. But then it took me too long and rhubarb season was over, so I thought I’d sit on this recipe for a long year so I could share it when the time was right.

Now is the time.

I don’t grow rhubarb in our garden (yet.) But my grandma does, and so sometimes we get some from her garden, and sometimes we pick some up at the farmer’s market. But I don’t actually have that many recipes for rhubarb, so I searched through my grandma’s recipes and found this lovely.

When I found these adorable tag cookie cutters, I knew right away that they needed to be part of our Christmas cookies this year. And when I thought about what to write on them, this song immediately popped into my head. And then my imagination started flowing, figuring out how to combine Christmas with this love theme. Then my sister suggested using a turquoise and red color scheme, and these penguin cookies were born. (more…)
